'Only' Sandwiches, Burgers and Panini Event Round up

Thanks all for participating in the ' Only' Sandwiches, Burgers and Panini Event. Thanks Pari for giving me the opportunity to host the event. Event announcement | 'Only' Sandwiches, Burgers & Panini... And a giveaway!!

The advantages of preparing sandwiches are many. Foremost being it can be made in a jiffy. It is also healthy, filling & can be made as a complete meal by itself.  Burger is sandwich consisting of a cooked patty placed inside the sliced burger bun.Both are served with a delicious dressing. Since sandwiches & burgers are our family favorite, I wanted to host this event. The motto behind it is to learn more & more sandwich recipes from you all.  I am excited to host the 'Only' Sandwiches, Burgers & Panini.





I hope you guys are all charged to participate in this event. To keep this blogging, sharing & participating more exciting, there is a cookbook sponsored by Tarla dalal. Pari of Foodelicious (who is the owner of this event) has written about the sponsored cookbook in her blog here.

Now coming to the rules for the event. 

Rules for the event:
  • Any number of fresh entries can be sent but only two recipes from archives will be accepted. 
  • Non bloggers could participate too. Please take a picture of the sandwich, burger or the panini prepared. Mail me the picture and the recipe (Mail me at sushmadotsaviruchiatgmaildotcom). I will post the picture & your recipe during the event round up. 
  • Only Veg entries accepted (Eggs accepted too). 
  • New and old posts should be linked with my event announcement and Pari's giveaway announcement.The entries will not be accepted in case of failing to follow this rule. 
  • Link your entries using the Inlinkz tools. Those participating in the giveaway (anyone who can provide an address in India) enter under Giveaway participation entries category else link under Non participants of the giveaway. Please enter your entry only once in one of the links.

Aloo Sandwich | Potato Sandwich

Potato sandwiches are a great option for weekend brunch or weekday dinner.These are our current favorite! I pack them for my hubby's lunch too. These are quick to make & quite filling.


Preparation Time: 20 mins
Cooking Time: 15 mins
Adapted from: Manjula's Kitchen


Ingredients: (Makes 3 sandwiches)
Bread: 6 slices (I used Aunt Millies Potato Bread)
Melted butter: 1 tbsp
Boiled & mashed potatoes: 2 cups
Salt: As needed
Chopped coriander leaves: 2 tbsp
Chili powder: 1/2 tsp
Lemon juice: 1 tsp
Cumin seeds: 1 tsp
Cheese slices : 3 nos (I used grated Cheddar & Mozzarella Cheese)


Method:
Mash the potatoes thoroughly. Add in the coriander leaves, chili powder, lemon juice, cumin seeds, and salt to the potatoes & mix well.

Heat the tava/griddle.
Take 1.5 to 2 tablespoon of potato mixture & spread the mixture onto the bread. Press the mixture hard onto the bread. The potato mixture should stick to the bread.

Do the same on the other slice too.
Smear the butter over the potato spread.
Place both the slices of bread on the griddle (Potato spread should be facing down).

Cook on medium heat until the potatoes are cooked & turn crisp.

Flip one slice of bread. Add in the cheese & cover it with the other slice.


Cook again on both the sides till the sandwich turns golden brown.

Make two more sandwiches similarly.
Serve them hot with a dip/green chutney or tamarind chutney.


Notes:

  • Along with the cheese, you could add slices of tomato, cooked beets slice, and a slice of paneer(cottage cheese) too. I often add paneer to this. It tastes great!
  • The potato mixture is very flexible. You could play with a lot of flavors. I have tried adding carom seeds/ajwain instead of cumin seeds. I do add jalapenos for the extra kick sometime.
  • The above ingredients & recipe is just to give an idea. You could use your imagination to build your own grilled potato sandwich.

Everyday sandwich: For a healthier you.

Off-late I am trying out a lot of sandwiches. Here is one such sandwich I prepare. I got this recipe from the Sanjeev Kapoor's Khana Khazana! Made few modifications according to the ingredients what I had handy.

Here is the recipe for you.

Preparation time: 10mins
Cooking time: 5-7mins
Serves: 2

Ingredients: (Makes 4 sandwiches)
Sandwich bread slices: 8 nos (Use any bread of your choice. I have used white bread here)
Sliced cucumber
Sliced tomatoes
Boiled & sliced beetroot (optional)
Sliced onions,
A slice of cheese for each sandwich
Salt & pepper for seasoning
Butter: 1 tsp, for each sandwich

For the spread:
Green chutney: 1 tsp*
Tomato ketchup: 1 tsp*
*For each sandwich 


Method:

  • Take a slice of bread, add the green chutney & the tomato ketchup. Spread both of them evenly on the bread.

  • Top it up with the sliced vegetables of your choice. Sprinkle the salt & the pepper over the vegetables.

  • Add a cheese slice.
  • Cover it up with another slice of bread. 
  • Add around a tsp of butter to the griddle/tava/tawa or griller. Place the sandwich over the butter & cook it on a medium-low heat on both sides until golden brown. 
  • Remove from the griddle. Serve it hot with a dip of your choice. Enjoy!


Notes:
Feel free to use any vegetable of your choice. I have added carrots, capsicum, raddish & many more to this basic sandwich recipe.

Corn Sandwich: Beginner series

Another quick breakfast or a evening snack recipe. You could make it for your dinner too!

Ingredients: (For around 3 sandwiches)
Sandwich bread: 6 slices
Sweet corn: 1 cup, fresh or frozen
Jalapeño peppers*: 1 tbsp, finely chopped (adjust according to your family needs)
Coriander leaves: 1 tbsp, finely chopped
Mayo/Mayonnaise garlic**: 1tbsp
Salt: According to taste
Pepper powder: 1/4 tsp
Butter: 1 tsp, for each toast

* Jalapeño peppers could be replaced with capsicum. If you want the sandwich spicy, add finely chopped green chili + capsicum to it.
** The mayonnaise I use has garlic in it. If you have plain mayo without garlic, add a pod of minced garlic to it or just use plain mayo. 




Method:

  • Boil the sweet corn & drain the water.Allow the corn to cool.
  • Add the mayo, salt, jalapeño peppers, coriander leaves, pepper & mix them well.
  • Keep the mixture in the fridge for 10-15mins.
  • Smear the butter on both the sides of the bread (Repeat it for all the breads)
  • Scoop out a tablespoon of the corn mixture & spread the corn mixture over the bread evenly. 
  • Cover the corn mixture with another bread. 
  • Toast both the sides of the sandwich on a low heat over a griddle/tava/pan, toaster or griller.

  • Cut them into 2 & serve them hot with a dip of your choice. 
Notes:
  • Mayo or mayonnaise is easily available in most of the supermarkets in India. I use eggless mayo. 
  • The measurement mentioned above is just a reference. You could alter it according to your preference. 
  • Other vegetables like mashed potato, chopped tomato, shredded cauliflower, grated paneer/Indian cottage cheese could also be added to this.
