'Only' Sandwiches, Burgers and Panini Event Round up

Vada Pav or Wada Pav : The Indian burger

What do you crave during cool & rainy days? For me, it's deep fried street chaat. It could be a plate of hot masala puri or some bhajiyas (fritters). When we talk of street foods, who do you think can resist street foods? There is not much fun when you eat the street food or chat at the airconditioned restaurants.(Raste pe chaat khane ki maza hi kuch aur hain na!). I can see many nodding heads :D But when you are away from all those pleasures of life, there is only option left. Make them at your home & relish.

Wada Pav is a famous street food of Mumbai. After pav bhaji, this is the most appreciated Mumbai street food at my home. Vada Pav does take more time, but if you plan in advance & then cook, it'll not be tiresome.

Preparation Time: 30 mins
Cooking Time: 15-20 mins
Serves: 3-4

Ingredients:

For the batata vada (stuffed potato fritters)
For the stuffing:
Boiled Russet potatoes: 3 nos, large (refer notes below)
Green chilli paste: 2 tsp
Grated garlic: 1 tbsp
Turmeric powder: a big pinch
Oil: 1 tbsp
Salt: As needed
Cumin seeds: 1/2 tsp
Asafoetida: a big pinch
Finely chopped coriander leaves: 2 tbsp
Lemon juice: 2 tsp

For the batter:
Besan/Kadle hittu/ Gram flour: 1 cup
Rice flour: 2-3 tbsp, optional but recommended
Salt: As needed
Chilli powder: 1/2 tsp
Turmeric powder: a big pinch
Baking soda: a pinch
Water: As needed

Enough oil for deep frying the batata vada (stuffed potato fritters)

For the dry coconut chutney: 
Dry coconut: 1/2 cup
Red chilli powder : 2 tsp or about 8-10 dry red chillies
Salt: As needed

For assembling the burger | vada pav:
Pav or dinner rolls or burger buns: About 9-10
Dry coconut chutney: 2 tsp on each bun
Green chutney: 1 tsp on each bun, optional
Batata vada : 1-2 nos for each bun.

Method:
For the dry coconut chutney:
Blend together the dry coconut, chilli powder & salt in a blender until it is a coarse powder. Keep it aside.

For the batata vada:
Peel the skin of the potatoes & mash them roughly.
Heat oil in a broad pan. When oil is hot, add the cumin seeds. When cumin seeds turn golden brown, throw in the chilli paste & grated garlic. When garlic gets cooked, add the turmeric powder, mashed potatoes, salt & mix well. Add in the coriander leaves & lemon juice. Turn off the heat.
Mix & mash the cooked potato again.
Make lime sized balls from the potato mixture & keep it aside.

For the batter:
In a bowl, add the gram flour, rice flour, baking soda, salt, turmeric powder, chilli powder & mix well.

Add little water at a time to the gram flour mixture and prepare a batter. The consistency of the batter should be like a pancake batter or a thick milkshake.
Heat enough oil for deep frying the batata vada. When oil is hot, dip the potato balls in the gram flour batter & slide the raw batata vada in the hot oil.

Deep fry on both the sides until the vada turns golden brown. Remove the vada using a slotted spoon & drain it on a paper towel.

Arranging the vada pav:
Slice or cut the pav or burger bun in half.

Spread about 2 tsp of dry coconut chutney on one half of the burger bun.

**If needed, spread a teaspoon of green chutney on the other half of the bun. (I don't do this as we do not want the green chutney to over power the dry coconut chutney)
Place the hot batata vada on the dry chutney powder.

Cover it with the other slice.
Dig in!!

Notes:
  • Use any potatoes of your choice.
  • Vada pav is supposed to be garlicky & spicy. So, ensure to make the batata vada spicy & garlicky. 
  • Make the dry coconut chutney spicy too. You could serve the vada pav with a slightly roasted green chilli too. 
  • Ensure to serve the batata vada hot.

Kidney bean patty burger | Vegetarian Burger | Bean burger | Spicy burger

I'm introducing burgers to my son. Though he is staying in the States from the last one year, he is totally off to American food. He prefers Indian anytime. Although it is good for his health, it becomes extremely difficult when we travel. To make him get used to the burgers, I keep making burgers often.

Instead of the regular potato patty, I try with different patties each time. This time it was a kidney bean burger. Kidney bean is a great protein source. Although you could use canned beans, I prefer to use dried beans for obvious reasons.


Preparation Time: 20 mins
Cooking Time: Around 10 mins
Makes around 7-8 burgers



Ingredients:

For the patty:
Kidney beans : 1 cup, raw or 3 cups of cooked beans
Finely chopped bell pepper: 2 tbsp
Onion: 1 med sized, finely chopped
Finely chopped coriander leaves: 2 tbsp
Bread crumbs: from 2 slices of bread (about 1/4th cup)
Carom seeds | Om kalu: 1/2 tsp
Red chili powder: 1 tsp
Lemon juice: 2 tsp
All purpose flour/Maida: 2 tbsp, optional
Salt: As needed
Oil: About a teaspoon for each patty

For assembling the burger:
Burger buns: 7-8
Slices of tomato: 2 on each burger
A slice of cheese on each buger
Lettuce or baby spinach
Any dressing of your choice (refer notes below)

Method:
Soak the kidney beans overnight. Drain the water.  Add the kidney beans + water + 1/2 tsp of salt to the pressure cooker and cook it for about 4-5 whistles.Let the cooker cool down.
Once the pressure is released from the cooker, remove the lid & drain the water from the beans. You get approximately 3 cups of cooked beans.
Mash the beans gently. To the mashed beans, add in the ingredients mentioned for the patty (except oil & AP flour).
If the mixture is gooey & sticking to the hands, add in a tablespoon of flour at a time to adjust the consistency.


Heat a griddle. Make the patties & shallow fry the patties on both sides on a medium heat.


Remove the patties from the griddle & immediately arrange the burger.


Cut the burger bun in half. Add a layer of  greens first (I have used baby spinach here).
Follow the greens with the cheese slice (I did not have the slices, hence used grated mozzarella. What matters is the cheese & not the form, isn't it ;)  )
Place in the patty. Add a tablespoon of dressing.
Finally a slice of tomato, and cover with another slice of the burger bun.
Press in the burger & serve immediately.


Notes:

  • The above mentioned ingredients are a just a guideline. You could vary accordingly & it will be delicious anyways :)
  • Any dressing of your choice could be used. I prefer mustard while my family loves mayo. 
  • For the above burger, I have mixed equal quantities of mayo + tomato ketchup as dressing!

Grilled Eggplant Burger

This is inspired by one of the sandwiches I had recently. I looked for the recipe & found one.
You are sure to like this if you like grilled eggplants!


Makes: 7 small burgers
Preparation time: 15 mins
Cooking time: 15 mins

Adapted from: Simplyrecipes

Ingredients:
Burger buns: 7, small ones
Big purple eggplant: 1 no (around 1/2 a kg)
Beefsteak tomato/ Large sandwich tomato: 1 no
Onion: 1/4th cup (cut into 1 inch slices)
Mozzarella cheese: 7 thin slices

Dressing1:
Olive oil: 2 tsp
Balsamic vinegar: 2 tsp
Salt: According to taste

For grilling the eggplant/Dressing2:
Olive oil: 3 tbsp
Apple cider vinegar: 2 tbsp
Italian spices: 1/2 tsp
Salt: According to taste
Pepper: 1/4th tsp

Method:
Preparation for the burger:

  • Cut the eggplant into 1/4th inch slices. Arrange them on a kitchen towel. Sprinkle salt on both sides & allow it to ooze out water. Let it sit for 10 minutes.
  • Meantime, mix the olive oil, balsamic vinegar & salt. Mix them gently with a fork. Dressing1 is ready.
  • Slice the tomato. Roll the sliced tomato over the the dressing 1 prepared above. Remove the tomatoes & add in the onion to it.
  • Add all the ingredients mentioned for grilling the eggplant in a large bowl. Gently fold in. Dressing2 is ready.
  • Squeeze out all the water from the eggplant & brush the dressing 2 on both sides of the eggplant & grill* them for 3-4 minutes on each side. 

Arranging the burger: 
Cut the burger into half.
Place 3-4 slices of grilled eggplant.
* I do not own a grill, hence roasted the eggplant using the griddle.
Follow it with tomato.

Then the onions along with some of the dressing1.

Finally add in the cheese slice & cover the burger with the other half.
I had my burger with some homemade salad. It was heavenly!


Note:
This is a great lunch box meal too. I have already packed it twice for the office.
