My son is having holidays at school which means more cooking to me! Few days back, he demanded a khichdi/pongal & I made these stuffed jalapenos to go with it. It tasted heaven! It does not take much effort & your taste buds will jump with joy.
PS: I made only 3 stuffed jalapenos for myself & hence using the measurements given below. If you want to make it for 3-4 people, use the measurements given here.

Ingredients:
Jalapenos: 3 nos
Chickpea flour/besan: 2.5 tbsp
Lemon juice: 1 tsp
Salt: According to taste
Turmeric powder: a small pinch
Coriander leaves: 1 tbsp, finely chopped
Oil: 1 tbsp
For tempering:
Oil: 1 tsp
Mustard seeds: 1/4th tsp
Asafoetida: a small pinch

Method:
- Wash & pat dry the jalapenos. Slit & de-seed.
- Mix the besan, lemon juice, salt, coriander leaves & turmeric in a bowl. Add around a tbsp of oil to the besan mixture so that it holds the shape when pressed into a fist. (Water is not added!)
- Stuff the jalapenos with this mixture.
- Heat oil in a pan. When oil is hot, proceed with mustard seeds & asafoetida. Add thestuffed jalapenos & cook the jalapenos on a low heat for 8-10 mins. Keep it covered while cooking. Don't forget to toss it once in every 2-3 mins.
- Stuffed jalapenos are ready!
